Viral Nottingham bakery that attracts lengthy queues at markets to open Carrington shop

The family-run bakery attracts lengthy queues wherever it trades

A popular bakery that has been trading at markets for three years is to open a shop. Baked Buns attracts long queues wherever it trades, thanks to its sweet treats.

As well as the signature cinnamon buns, there are flavours such as peach crumble, tiramisu, lemon meringue and rum and raisin, made with rum from Nottingham’s very own distillery, the Sacred Ape.

Jason and Karolina Shaw started the company in 2023, and have sold their baked goodies at The Garage, in Chilwell, Bingham farmers market, Sherwood vegan market and Ashfield Food and Drink Festival in Hucknall. The couple’s young son, Lucas, can sometimes be spotted helping them out.

After months searching for the right premises, they’re to open in Pelham Road, Carrington, in the former premises of Deli-Llama, a shop and cafe that closed down five years ago.

Revealing the plans on social media, the bakers said: “Three years of markets, early mornings, sell-outs, long days, big dreams… and somehow, we’re finally here. Our very own Baked Buns shop.

“What started as a little idea has grown into something we honestly never could have imagined — and seeing our name on this door feels a little surreal. We can’t wait to open the doors and welcome you all.”

The shop will have a soft opening on Saturday, September 12, from 9am to 2pm unless they sell out earlier. It will officially open on Saturday, September 26. In-between they will be at Thoresby Food Festival on September 19 to 20.

Jason has worked as a chef and baker for more than 21 years, including a stint at Iberico. His wife Karolina has loved baking since she was young, when she learnt alongside her grandma in Lithuania.

Their buns are also stocked by a number of businesses, including Chrispies in Mapperley, The Pour Store in Ruddington, Bubble and Bean in West Bridgford and Blend at Nottingham Contemporary.
