How to make delicious avocado on toast:
Ingredients:
- One can of peach slices in juice (drained)
- One medium avocado
- 10 cherry tomatoes
- Five basil leaves
- Half a lime
- Salt and pepper to taste
- One tablespoon of olive oil
- One tablespoon of balsamic vinegar
- Four slices of sourdough bread
Method:
Finely slice the basil leaves and halve the cherry tomatoes.
Combine the basil (reserving a few slices for garnish), tomatoes, peach slices, balsamic vinegar and a drizzle of olive oil in a bowl and mix with a spoon.
Season with salt and pepper to taste. Halve the avocados, remove the stone, scoop the flesh onto a plate and mash using a fork.
Add a few drops of lime juice, season with salt and pepper to taste, then stir thoroughly.
Toast the bread slices and begin assembling. Spread the avocado cream first, then top with the peach slices and tomato mix.
Garnish with finely sliced basil leaves before serving.
