It will be in the former home of Carluccio’s

A Vietnamese street food brand is opening a restaurant at The Mall at Cribbs Causeway later this year.

Pho will replace Carluccio’s, after signing a 15-year lease for a 3,681 sq ft space at The Mall. It’s set to open later this year, though no exact opening date has been confirmed as of yet.

It will also be Pho’s second location in Bristol, the existing Pho restaurant having opened on Clare Street in the city centre in 2016.

This latest name follows the recent openings of Picaro Lounge, Joe & The Juice, Pizza Express, Honest Burgers, and Wingstop, as the shopping centre continues to evolve its food and beverage offering.

It already has the likes of Wagamama, Nando’s and Itsu, with the aim of refreshing it dining offer to ‘cater for its growing Gen Z audience’, which reportedly rose by 13 per cent over 2025.

Katie Searle, director, asset management at Sovereign Centros from CBRE, said: “The addition of Pho allows us to further diversify the dining offering at Cribbs as we create more choice for our visitors. Pho has become one of the UK’s rising food and beverage stars and we are delighted that they have selected Cribbs for their second Bristol location.

“It has been a transformative year for food and beverage at Cribbs as we freshen up our offering by adding operators who can offer new experiences. The announcement of Pho comes straight off the back of the hugely successful Picaro Lounge opening which is drawing in visitors from across the region.

“Pho’s signing showcases how Cribbs continues to lead the way in the South West when it comes to innovating our offering by bringing in leading UK and international F&B operators.”

Offering freshly made Vietnamese street food ranging from signature pho noodle soups to curry, rice bowls and salads, Pho will benefit from the growing residential community across the Cribbs Causeway area with the Brabazon development set to deliver 6,500 homes and 2,000 student rooms.

Meanwhile, the 19,500-capacity arena at the site, which is set to open in 2028, will see many eventgoers choose Cribbs for pre-concert meals and drinks.

Libby Andrews, marketing director at Pho said: “We have been operating in Bristol for just over ten years now and absolutely love the city. We are really pleased to have partnered with Cribbs’ to open soon in what is becoming a very exciting and diverse food and beverage offering in the region.”
