My personal go-to addition for morning scrambled eggs is an extremely common, and remarkably inexpensive herb.
Parsley brings a delightful freshness to eggs and accentuates their savoury character.
It’s incredibly simple to include and transforms an affordable easy breakfast into something resembling restaurant-quality brunch.
Another advantage of using parsley is its excellent freezing properties. Unlike herbs such as basil, parsley doesn’t deteriorate when frozen.
All that’s required is chopping it finely and placing it into a small container or ziplock bag for freezing.
You can incorporate it into your eggs directly from frozen – it tastes identical and represents an excellent method for using surplus parsley.

- Two eggs
- One tbsp butter
- Chopped fresh parsley
- Salt and pepper to taste
Method
Crack your eggs into a bowl and whisk them together.
Melt your butter in a non-stick pan over a medium heat.
Add your eggs to the pan and stir continuously until a soft scramble forms
Add your chopped parsley, salt and pepper.
Serve over fresh toast and enjoy
