Avocado is a brilliant start to the day, but if you’re looking for a fresh twist, this simple recipe uses just three ingredients and is ready in under 10 minutes

Avocado can be a brilliant way to start the day. Packed with healthy fats and fibre, it keeps hunger at bay for longer than many other breakfast options. However, if you have grown weary of the traditional smashed avocado on toast, or are looking to cut down on your bread consumption, there is a simple alternative that provides an equally satisfying morning meal.

Recipe developer Paula at Call Me PMc suggests that just two ingredients combined with avocado are all you need for a quick, nutrient-rich breakfast that is easy to put together at home. With just parmesan and lime, here is how to make grilled cheesy avocados.

Paula commented: “There are a couple of great things going on here with this avocado side dish! It’s healthy, filling, beautiful (we do eat with our eyes first!), and it’s an easy six-to-eight-minute meal or snack.

“I love that you can serve this as a light breakfast or snack or as a side dish. Avocados are versatile and taste good in many different flavours. [Try] different cheeses with this recipe, or even broiling an egg on top.”

Ingredients

  • One medium avocado
  • One lime zested and juiced
  • Two tablespoons of Parmesan cheese, grated
  • Salt to taste
  • Pepper to taste

Method

Begin by preheating the oven or toaster oven to the grill setting, allowing it to reach full temperature before preparing the avocado.

Carefully slice the avocado in half lengthways, remove the stone, and place the avocado halves on a heat-resistant tray or baking dish. Then drizzle fresh lime juice over the avocado halves to bring out the flavour.

Sprinkle grated Parmesan cheese, lime zest, salt, and freshly ground pepper over the avocado, making sure the toppings are spread out evenly.

Place the avocado under the grill and cook for approximately four minutes, or until the Parmesan has melted and taken on a light golden hue. Remove the avocado from the oven and serve immediately while still piping hot.
